These are recipes where much attention is paid to taste and simplicity and where the desire to prepare a visually satisfying and stunning dish does not compromise the goodness of what you go to cook.

Ingredients, like I love to use, Seasonal, Preservative free, possibly biological and, if not the territory, of traceable provenance. Food worked with simplicity, without the use of treated condiments, that allows one who tastes recognize the flavor and taste of all the elements of the recipe. Short cooking time or almost nonexistent ensure aromas unchanged. La mise en place brings back memory to the delicacies of more than the refined grandmother chef dishes pluristellati. Omelette WITH HERBS AND FLOWERS TARASSACO

The landscape around my home now and’ bellissimo, gives color to the winter season made me forget, like green, that green that only spring knows us. I'm, like all, isolated at home but live in the mountains at least allows me to walk alone through the trees and the meadows in bloom now. I like to cook with what nature offers us lovingly cyclically. I carefully collected some leaves and some dandelion flowers. It seems to me the perfect raw material to make a simple dish “Nude Food” to propose as a first recipe to share together. It is a second easy preparation and low cost for two people.

The ingredients are: 4 eggs, 150 grams of cow's milk ricotta, 150 grams of grated Parmesan cheese, flowers and dandelion leaves, salt, pepper, and a little oil.

  • Stir-fry dandelion with oil and let it dry for a few minutes.
  • Chop it and add it to cottage cheese,egg and parmesan cheese mixed,salted and peppered previously.
  • Coat with baking paper a special pan and cover the bottom with flowers (after removing the stems).
  • Pour over the mixture and bake at a temperature of 180\200 degrees until cooked
  • Turn on a serving plate and garnish as desired with some leaves and flowers secluded previously.
