400 ml of fresh whipping cream

250 gr of blueberries + 2 spoons of brown sugar or 300 gr of blueberry compote

Ring mold of cm 18/20 of high diameter 8 cm

Procedure

Place the parchment paper on a dripping pan and place the ring on it. Melt the butter in a water bath, roughly crush the biscuits with a rolling pin, so they will be more crunchy. In a bowl mix biscuits very well, melted butter and the spoonful of sugar. Spread the dough inside the ring and press it well using the bottom of a glass, put the dripping pan in the refrigerator for at least an hour. Turn on the oven at 180 ° and cook the base for 10 minutes. Remove from the oven and when it is cold, put it back in the fridge for half an hour. Remove from the fridge, slide very gently on the serving plate, the ring with the cookie dough, without parchment paper.

Wash the blueberries, do not dry them and cook over low heat with brown sugar for 10/15 minutes, let cool.

In a bowl, whip the cream very well with the sugar and then whisk adding spoonfuls of Philadelphia, whisk well before adding the next spoon, it must be lump-free but very compact. Pour the cream obtained on the base and level, refrigerate for at least 12 ore. Before serving, add the blueberries cooked with sugar or the blueberry compote and spread them on the cheese cake, then gently remove the ring, if the cake does not come off the ring, pass with a knife between the metal edge and the cake.
