I love to prepare this typical dessert from the Florentine tradition to my friends.. It is not’ complicated to make and very suitable for finishing an important lunch or celebrating a meal’ special occasion. No special molds matter, e’ just a glass bowl like the ones you use every day for salad. Once flat, it looks like a dome of sponge cake containing, like a casket, a precious treasure…here of undisputed goodness’ ! There are many variations on the theme that Zuccotto allows us to achieve. After some tests, happier, I found the ad hoc variant for me; now I pass you, Let me know what you think.

INGREDIENTS x 8 persone

  • 400 gr of cow's ricotta
  • 400 gr of sheep's ricotta
  • 160 gr of granulated sugar
  • 70 gr of candied orange cubes (like the Paneangeli jar)
  • 50 gr + 80 gr of dark chocolate al 70%
  • A sponge cake of approx 20/22 cm in diameter
  • 4 spoons of maraschino or Cointreau e 10 spoons of water for the bath.

PROCEDURE

Blend the 2 ricotta with sugar, divide the mixture: circa 200 gr in a small bowl and the remaining mixture in a larger bowl. Chop 50 gr of chocolate and add it, together with the cubes of candied orange, to the major compound. Mix. Melt in a water bath 80 gr of chocolate and add it when it is warm to the 200 gr of ricotta, mix well. Line a salad bowl with plastic wrap (about cm 22 h cm 8/10). Cut the sponge cake into slices 1 cm, quickly wet them only on one side, in the water and liquor bath, then line the mold with the wet part towards the mold. When the bottom and walls are lined with sponge cake, pour the ricotta mixture, candied fruit and pieces of chocolate, with the help of a ladle press in the center and form a hole. Pour the melted chocolate and ricotta mixture into the hole, level then finish with the other slices of wet sponge cake. Close with cling film and refrigerate for at least 12 ore. Pour into the serving dish and remove the foil.
